Fudgy Chocolate Cake In A Cup

What you need:

  • 3 tablespoons gluten-free flour (sifted)
  • 3 tablespoons milk
  • 3 tablespoons caster sugar
  • 1 tablespoon + 1 teaspoon cocoa
  • 1 tablespoon butter (softened)
  • 1/2 teaspoon vanilla extract
  • 1 dollop ice cream
  • 1 pinch salt

In a large bowl, combine flour, caster sugar, 1 tablespoon cocoa and salt. Carefully mix in milk, butter and vanilla extract. Stir until ingredients are well-combined. Pour mixture in a microwave-safe mug and heat in the microwave for 1 minute.

Cool for a few minutes before dusting with remaining cocoa. Serve with ice cream on top.

Easy Apple Crumble

What you need:

  • 6 red apples, cored, peeled and each sliced into 8 wedges
  • 3/4 cup + 2 tablespoons raw sugar
  • 4 tablespoons rice flour
  • 3 tablespoons almond meal
  • 2 tablespoons desiccated coconut
  • 1 1/2 tablespoons margarine, softened

With a small amount of water, heat a pan over medium heat then place apple wedges to cook until tender. Remove from heat and set aside. To make the crumble, mix together 3/4 cup sugar, rice flour, almond meal, desiccated coconut and margarine in a bowl. Mix with clean hands until ingredients are well-combined.

Layer the cooked apples (along with the juices) in a greased oven-proof dish. Place crumble mix over apples and bake in a pre-heated oven (180C) for half an hour or until golden brown. Serve hot or cold with cream or yogurt.

Choco-Almond Crunchy Bites

What you need:

  • 4 pcs. SunRice Thick plain rice cakes, crumbled
  • 1/4 kg (or a little more) milk chocolate
  • 1/2 cup toasted sliced almonds
  • 1/2 cup diced dried apricots

In a saucepan, melt the milk chocolate with a little bit of water over low heat. Once melted, add the crumbled rice cakes, almonds and apricots. Stir to combine ingredients well.

Remove from heat and scoop 1 tablespoon of the mixture at a time into a greased baking sheet. Allow a few minutes to cool and harden before serving.

But then too malayalee at times have puttu with ghee or papad. There is a variety called the cherata puttu, here the rice powder and grated coconut mixture is filled into a half coconut nut shell. And when it is cooked it is put upside down onto the plate. It looks like a hemisphere, and it looks very different and it is garnished with kadala curry. Most of the malayalee’s love to have puttu, but there are still some exceptions. I’ve heard some people mispronouncing it as “Pittu” don’t get misled. It is exactly “Puttu”.

There is another variety called as “chakka puttu”, grated jackfruit is added into the mixture and steamed, which gives you a sweet taste. “Puttu” and “pazham” (plantain) is a common combination, also some people have it with milk. Anyone planning to visit Kerala, should definitely try out “puttu”, just ask the restaurant people to prepare it for you. If you ask in advance they would love to make it for you..And if you want to make a 1000 varieties of puttu, don’t be surprised…you could easily do it. The best part of travelling across Kerala is that one never has to eat the same typical food everywhere. You can tantalise your taste buds in every region in Kerala as every district has its own mouth-watering sumptuous delicacies which must not be missed at any cost. Side dishes: Aviyal it is a blend of vegetables, coconut paste and green chillies which is seasoned with spoonful of coconut oil and curry leaves which are added after the Aviyal is off the stove. Thoran consists of minced string of beans, cabbage, radish or grams. The spice is added by red chillies and the sweet taste by grated coconut which is just delicious! Savouries: Upperi which is deep fried banana slices, Pappadam are wafers made up of black gram flour, Ginger Pickle.

The feast is finally wound up by serving desserts like Payasam or Pazham. Also Kaalan, which has buttermilk seasoned with ginger, turmeric and green chillies, is served.
