7 Tips for a Healthy Digestive System

Having a healthy digestive system is extremely important. Whether you are an athlete bodybuilder or average Joe, it’s important for your body to break down and digest foods and convert them into energy as efficiently as possible.

“Your digestive system breaks down the foods you eat into the nutrients your body needs. If you neglect your digestive health, your body could run into problems digesting foods and absorbing those nutrients,” says Krisha McCoy on Everyday Health.

For some of us, digestive discomfort has become a fact of life, like never getting enough sleep or having too much to do. We complain about everyday ailments such as occasional gas, bloating and irregularity, assuming they are inevitable. But they don’t have to be. By paying attention and making a few simple changes, you can help your digestive system do the job it was made to do – absorbing nutrients and keeping things running smoothly. Learn what you can do today to help take care of your digestive system.

Tips for Good Digestive Health

Good digestive health starts with making healthy food and lifestyle choices. Here are some effective tips to improve your digestive health:

Eat a high-fiber diet: No surprise here. Consuming a diet that is high in fiber will keep foods moving through your digestive tract. It can also help prevent a number of common digestive issues such as constipation, IBS, and others.

Stay hydrated: Always drink plenty of water. Water helps your body dissolve fats and fiber and helps things move through your system more efficiently.

Add probiotics into your diet: Probiotics are healthy bacteria that exist in your digestive tract. Adding more to your diet through food and supplementation will help keep your body healthy. Low fat yogurt, sourdough bread, sour pickles and kimchi are a great source of probiotics. Want to include more probiotics into your diet?

Cleanse and detox: Performing a cleanse on occasion will help your body refresh and recharge, and allow your digestive system to reset.

Limit consumption of processed foods: It’s always best to choose fresh, high quality food sources such as fruits, vegetables, and lean meats over processed and high fat food options.

Exercise regularly: Exercise helps keep food moving through your system as it uses the food you consume for energy. It also helps you maintain a healthy weight, something else that will improve your digestion.

Eat on a schedule: Your body loves routine. Eating frequent, smaller meals and snacks will keep your digestive system working effectively and efficiently.

Following these tips will ensure that your digestive system is working optimally, something that will keep you healthy, full of energy and in a position to achieve your fitness goals.

Covid 19 – Your Defense Against It

Our world continues to get shocked with pandemic diseases causing the loss of thousands and even millions of people. It’s possible for your body to be affected by these diseases and infections. The most recent COVID – 19 has caused our world to take generous precautions to avoid and defeat the rampant virus. The virus also known as SARS-CoV-2 originated in Wuhan China and has made viral impressions globally over the past few weeks. Some cases are reported much more severe than others. A major risk of the virus is that some carriers show no symptoms yet it’s as contagious as those that do. Those that aren’t showing any symptoms are more likely to contribute to the person to person spread. Those with severe medical conditions are at a greater risk of picking up a serious case of COVID -19 than those without, yet people of all ages have picked up the virus. We will continue to see the virus spread over the coming months. For more information and updates on the virus please reference the Centers for Disease Control and Prevention Website (link below).

This is a reality that we must all face and prepare for. Having a body that is strong and healthy enough to fight off any serious illnesses is something that comes from consistently making healthy choices. What you intake and do not intake will structure your cells accordingly. The flow of your lifestyle will also be a large influence on the makeup of your body’s DNA and molecular structure.

Eat for Infection Prevention and Immunity Strength

Choose foods and supplements that are rich in vitamins and minerals. Raw fruits and vegetables, leafy greens, and grass fed/ pasture raised/ wild caught meat. Garlic, Elderberry, and Oregano Oil, are healthy bacteria fighting aids. Making healthier intake choices will eliminate harmful pathogens and fight infections.

Regulate Gut Health

Healthy probiotics like Kimchi can stimulate the neuro-receptors within your gut. Colostrum is a great recommendation for cultivating immunity through supplements. This will increase your mental clarity, and the well-being of your body and digestive system. Incorporating probiotics into your lifestyle will also prevent Leaky Gut Syndrome, and Diarrhea from infectious causes.

Exercise to Increase Vitality

Physical activity promotes healthy blood, and natural killer cell production. Natural Killer Cells are white blood cells that reject tumors and viral diseases. Choosing to exercise builds bloods cells instead of fat cells and leads to ant-aging benefits. Exercise regulates a proactive body on the molecular level increasing healing abilities and disease prevention.

Get Proper Sleep

Healthy sleeping patterns as well as all the other topics we have discussed so far will reduce your risk of getting heart disease, diabetes and immunity dysfunction.

Heat & Hydrate

Drinking fluids will wash the virus into the stomach where it will die in the stomach acid. If you do not drink enough fluids it can move from the windpipe into the lungs. The virus cannot survive in temperatures greater than 530 degrees Celsius. That is about 133 degrees Fahrenheit. The higher the temperature the faster the virus will die. Fit a regular sauna visit into your routine and make sure you always keep a vessel full of fluids with you.

All together healthy eating, sleeping, heating, hydrating, and exercising will be your biggest weapon when preventing and defeating viruses like the COVID – 19. Take some time to learn about and appreciate the resources and design that nature provides for us to stay healthy and happy. We are all capable of monitoring our choices and our bodies. Feel better, look better, be better, and most importantly; live better.

A silent migraine can be induced by various causes including different types of foods. Being able to identify these foods and avoiding its consumption can provide the sufferer a long-term relief against the condition. Some of the foods that you have to watched out for include the following:

* Fruits, Pickles and Legumes: among all types of foods that can trigger migraine attacks, legumes are considered as the primary culprit of the condition. Certain types of beans including Lima, fava, garbanzo, pole, navy, Italian and pinto beans can all trigger the condition. Aside from that, pickles and other fermented foods can also trigger the attacks. Notice the effects of kimchi, sauerkraut, raw garlic, olives and onions after consuming it. There are certain fruits that can also stimulate silent migraine episodes. Consumption of papaya, figs, prunes, overripe bananas and avocados can trigger an attack.

* Caffeinated and Alcoholic Beverages: all forms of alcoholic beverages, particularly red wine can trigger a silent migraine attack. You can conduct an experiment by testing each type of alcoholic drink to see how it affects your condition. You will surely find at least one type of alcoholic drink that can trigger the attacks and make sure that you avoid this next time. Some individuals also experience the condition after consuming caffeinated drinks. To determine if this too can trigger an attack, you can reduce its consumption or consume it alternately to see how it affects your silent migraine condition.

* Chocolate: this is also considered as the main trigger factor of the problem. Take note that chocolate contains various chemicals. Although some of these contents can actually soothe the condition, some can exacerbate the symptoms of the condition. If consuming chocolates trigger attacks, it would be best to avoid its consumption or take note of the particular type of chocolate that causes silent migraine symptoms and exclude it from your list of considerable chocolates.

* Aged Cheese: aged cheese is considered as the most reactive trigger factor for almost all types of migraine conditions. Experts believe that the older the cheese, the more problem it can cause to the condition. Cheese contains a chemical known as tyramine, which is associated to the development of various kinds of migraine problems. The longer the cheese is aged, the more tyrosine is contained. Tyrosine can also contribute to the elevation of blood pressure. The aged cheeses that should be avoided include Stilton, Gouda, brick, blue, brie, gruyere, camembert, parmesan, Romano, provolone and cheddar. Certain types of cheeses also contain MSG, which can result to various symptoms such as Muenster, Roquefort, processes cheese slices and feta.

Taking note of these and avoiding its consumption can greatly help you prevent silent migraine attacks and alleviate its symptoms. Remember that although the condition is not accompanied with headache, it can still be considered as a debilitating condition, especially in case of severe aura or visual problems. If you are experiencing extreme symptoms of the condition, it would be best to consult your physician for proper diagnosis and relief for the condition.

Hiking Chiaksan in Wonju, South Korea

Korea isn’t a big place. It’s roughly the size of the state of Minnesota for my fellow Yankees.

But you know what they say: great things often come in small packages. One benefit of living in such a geographically compact place is that you can visit just about anywhere in the country in a day or over the weekend.

If you’re eager for an outdoor adventure but only have a single day or weekend to spare, Chiaksan in Gangwon-do, Korea is a great choice. Read on for details and directions!

A Mountain of Myth and Beauty

If we’re talking mountain ranges in Korea the best known are Jirisan and Seorraksan. These are beautiful places to visit and worthy of their reputations, but they’re often crowded with hikers.

Chiaksan isn’t quite as spectacular as it’s more famous brethren, but it still makes for a worthwhile destination and — bonus! — it’s far less crowded.

Chiaksan is located in Gangwon-do about 30km from the city of Wonju.

Like all but the most remote and abandoned trailheads in Korea, the base of Chiaksan is a busy place. You’ll find an array of stores and vendors selling everything from reliquary beads and Buddhist trinkets to kimchi pancakes and rice wine.

It might be a good idea to fuel up before your hike and the kimchi pancakes sizzling on griddles are sure to satisfy a hungry stomach.

Once you make your way through the distractions and delicious smells of this mountain bazaar you’ll arrive at the entrance to Chiaksan. The entry fee to Chiaksan is 2,500 won per person, cash only.

Not far from the entrance is Guryeongsa Temple.

Guryeongsa Temple is a medium-sized temple complex built during the Silla Dynasty. Built on the side of a steep hill, you enter the temple complex through a pavillion, towering wooden statues of the “Four Heavenly Guardians” looking down at you, and then climb a steep flight of stairs into Guryeongsa Temple.

As with most Korean temples, the air will likely be faint with incense and the rhythmic chanting of monks at their prayers will echo off of temple walls. It’s a pleasant and relaxing environment to spend a few minutes before setting off on your journey.

Hiking the Trails

From Guryeongsa Temple it’s a 5km hike to Birobong, the peak of Chiaksan. For roughly half of that hike the trail is easygoing — more of a leisurely walk than a hike, really.

You can follow trails through forests of towering pine, through quiet bamboo groves, down into valleys where the trail runs alongisde a bubbling mountain stream, or criss-cross between the two.

About 2km from the base of Chiak Mountain is Seryeong waterfall and from there the hike gets steep. I’m talking a Jekyll and Hyde transformation from the earlier part of the hike, so if you plan on trekking to the peak of Chiaksan make sure you’re well prepared.

If you’re not up to the challenge there’s a lovely botanical garden located between the Seryeong waterfall and Guryeongsa Temple. It’s a wonderful place to relax and simply enjoy the beauty of nature.

When you need a break from Seoul, or if you’re just in the market for your next outdoor adventure, head for Chiaksan. It’s a beauty of a mountain and one of Korea’s better kept secrets.

Getting There

Unless you have access to your own transportation, Wonju is going to be your base of operation for a trip to Chiaksan.

Take a bus to Wonju. Exit out the front of Wonju Bus Terminal and take local bus number 2-1, 31, 33, or 35. Any one of these busses will take you to a stop called “sanghanjuyooso”.

From “sanghanjuyooso” you’ll transfer to either the 41 or 41-1. It’s about 10 mintue trip from Wonju Bus Terminal to the transfer, and another 30-35 minutes to get from the transfer to Chiaksan.

Chiaksan is the final stop for both the 41 and 41-1. Bus fare is 1,200 won per trip, but your T-Money card (a public transit card available from most convenience stores and at most bus and train stations — essential if you’re travelling in Korea!) will work as well.

Biggest Skin Care Trends of 2018

Over the past year, people have become more conscious of their skin. The focus has shifted from makeup trends to glowing skin. More and more customers are convinced that taking care of skin comes before prepping it with external elements. Therefore, there is an increased interest in finding ways that will produce professional results when it comes to good skin. Following are the biggest skin care trends of 2018.

1. Personalized Skin Care

One of the best things that we have learned so far is that everyone has a different skin type; therefore, your skin shelf should include products that suit you. Whether you have oily skin, sensitive or dry skin your care should consist of products that specially cater to your skin type. If you have tried a number of products but still haven’t seen satisfactory results then you might be using products which do not suit your skin.

2. Serums All the Way

Another important development in skin has been the breakthrough of serums. From top models to dermatologists, everyone is convinced of the noticeable results of including serums in your skin care routine. There are so many different types of serums to tackle with various aspects. For instance, aging skin needs more moisture and hydrations; therefore, fore you can look into hydraulic acid serums. To restore bright skin you can include Vitamin C serums.

3. Mask On, Mask Off

Another skin care trend of 2018 is face mask. There are different types of face masks like peel-off, wash-off and sheet masks that are packed with ingredients for bright and healthy skin. Face masks are a great way to get rid of impurities and maintain good skin. You can try enzyme mask, deep seal facial mask or anti-stress mask for a healthy looking skin.

4. Start From Within

You are what you eat. This is why skin specialists warn people against fried and preserved foods which ultimately lead to acne prone and oily skin. However, with help of probiotics, you can get rid of toxins in your body. You can eat foods that have probiotic properties such as kimchi and yogurt. There are also supplements that promote gut wellness which can be used for restoring stomach and gut health. By taking care of digestive health, you can clear up your skin.

5. Toning is Essential

Excessive use of cleansers and exfoliators can strip off natural oils from your face which can upset the pH balance thus increasing oil production and acne. It can also cause aging in the skin because your skin becomes dry as a result. This is why you should go easy on the skin and switch to toners for cleaning skin in the morning. You can use toning pads or toning liquids for the promotion of naturally good-looking skin.

6. At-Home Skin Care Tools

Another interesting trend that has become incessantly famous is the use of at-home tools that will help you get the salon results without going to one. There are several gadgets such as exfoliation sets and micro-needling rollers that play an integral role in making your skin look flawless. Such devices can be used on your own without any assistance.

7. Skin Care is Synonymous with Body Care

While you are looking after your skin, it is also important to look after your body overall. You can buy imported moisturizers from many online resources to make sure that your body is always moisturized. Besides that, body scrubs and exfoliators will get rid of dead cells and leave your body soft and smooth.

8. Go Natural

2018 is the year of going all bare. People are minimizing the amount of makeup they put on their face and becoming more confident in their own skin. This is an important trend for a healthy lifestyle. Embrace it by using products that make you feel confident without wearing any makeup. You will feel more empowered and confident if you take care of your overall health.

4 Reasons to Love Seoul, South Korea

Seoul, Korea is one of the best places to live in the world and here’s why:

1. The Food

Korean food is some of the most delicious in the world. Korea is the home of kalbi (marinated barbecued ribs), bulgogi (spicy, marinated pork), kimchichiggae (spicy soup), bibimbab (mixed rice), etc. You also get more side dishes than main dishes, which can be nice in mixing up your eating experience. Most importantly, in Korea, you get lots and lots of Kimchi. Kimchi is delicious and great for your health. When Korean came out relatively unscathed from the SARS outbreak, Korean credited the nation’s kimchi consumption. Also, it’s important to note that most restaurants (even McDonald’s) delivers. And they deliver the food with teenage boys on scooters. What more could you ask for? Also, I should mention that McDonald’s delivers 24 hours a day, seven days a week. Also, there’s live octopus.

2. Korean Bath Houses

A Korean bath house is one of the most wonderful places you will ever go. The houses are split into two sections: one for males, one for females. Everyone strips down completely naked jumps into various little pools with different herbs and salts in them. They are also various temperatures. By the end of your experience, you will feel more refreshed than you ever have in your life.

Also, Korean bath houses have bidet sprayers. Bidet sprayers are like strong shower heads that are on a long cable so you can point in any direction. Bidet sprayers help you clean every part of your body, especially the parts you normally don’t get to clean very well. Additionally, you can also find bidet sprayers in most of the toilets around the city.

3. Heated Floors

When it gets cold in the winter, at least your floors will be heated (ondol). This is nice, because instead of sleeping on a bed, most Koreans sleep on pads on the floor. Additionally, instead of sitting on chairs at meals, most Koreans sit on pillows on the floors. Heated floors are nice on a cold day when you can get home and walk around barefoot on the warm, heated floors.

4. Technology

Seoul is more wired than any other city in the world. It is the birthplace of global electronics companies like Samsung and LG. Apartments in Seoul are controlled from cell phones and central keypads. Facial recognition is used in addition to bio-recognition security systems. Once a giant landfill, Seoul’s Digital Media City’s 557,00 square meters of electronic nirvana is the home for broadcasting, film production, games, telecom companies, cable channels, online shopping centers and e-learning.

Swine Flu, SARS, and Kimchi

A couple of thousand years ago, makers of Kimchi (a Korean pickled cabbage side dish), long before the appearance of SARS and the Swine Flu, would never have imagined their diet staple might prevent and possibly cure these viral infections.

In April ’09, The World Health Organization (WHO) raised the influenza pandemic status to phase four warning.

What’s the difference between the yearly flu season and being infected by the A (H1N1) flu?  According to the World Health Organization:

“Influenza A (H1N1) is a new virus and one to which most people have no or little immunity and, therefore, this virus could cause more infections than are seen with seasonal flu. The new influenza A (H1N1) appears to be as contagious as seasonal influenza, and is spreading fast particularly among young people (from ages 10 to 45). The severity of the disease ranges from very mild symptoms to severe illnesses that can result in death. The majorities of people who contract the virus experience the milder disease and recover without antiviral treatment or medical care. Of the more serious cases, more than half of hospitalized people had underlying health conditions or weak immune systems”. [1]

“If there is anywhere in the world that took a beating by SARS, it was Hong Kong,” says Peter Cordingley, spokesman for the World Health Organization (WHO) in Manila. “The lesson was learned.” Drawing on the past, Hong Kong has already issued travel advisories and stepped up controls at airports, including the use of infrared temperature scans and the detainment of travelers arriving with flu-like symptoms. [2]

The countries and overseas territories/communities that reported their first pandemic (H1N1) 2009 confirmed case(s) since the last web update (6 July 2009) as of 22 July 2009:

Afghanistan, Andorra, Belize, Bhutan, Botswana, La Réunion (French Overseas Community), Haiti, the Marshall Islands, the Federated States of Micronesia, Namibia, Sint Eustatius (Netherlands Antilles), Saint Kitts and Nevis, Saint Vincent and the Grenadines, Seychelles, Solomon Islands, the Sudan, Tonga, Turks and Caicos Islands (UK Overseas Territory), the United Republic of Tanzania, American Samoa (US), Guam (US)

As of July 22, 2009, the Grand Total of deaths attributed to swine flu is 1,154.  For updated information of reported cases visit the  WHO Pandemic (H1N1) 2009 site listed at the bottom of this article.   The below listed link to a Google Map depicts areas of the swine flu outbreak providing an accurate geographical image of infection outbreaks.

How is it treated?

For suspected cases of the virus, a five-day treatment of zanamivir alone or combination of oseltamivir and either amantadine or rimantadine is initiated. For confirmed cases of swine influenza A (H1N1) virus infection, either oseltamivir (Tamiflu) or zanamivir (Relenza) may be administered. [3]

Will a facemask protect me from being infected?

We have very limited information of the effectiveness of facemasks and respirators in combating and control of influenza. If used correctly, facemasks and respirators may help reduce the risk of getting influenza, but they should be used along with other preventive measures, such as avoiding close contact and maintaining good hand hygiene.

“Unless otherwise specified, “respirator” refers to an N95 or higher filtering face piece respirator certified by the U.S. National Institute for Occupational Safety and Health (NIOSH).  Three feet has often been used by infection control professionals to define close contact and is based on studies of respiratory infections; however, for practical purposes, this distance may range up to 6 feet. The World Health Organization uses “approximately 1 meter”; the U.S. Occupational Safety and Health Administration uses “within 6 feet.” [3]

  Any prognosis for the future?

Approximately 90-95% of infected people recover despite harsh symptoms to include 100+ degree temp. headaches, extreme fatigue, chills, diarrhea, sore throat, aching muscles, basically all the common flu symptoms.

To date, caution must be taken as swine flu (H1N1) is still spreading and may become a pandemic affecting entire regions or countries.  Annual Flu outbreaks are expected and predictable. However this outbreak has not followed usual flu patterns.  The future speculated prognosis is split among those who believe swine flu (H1N1) will diminish and die out this summer ’09 and those who believe it will return to claim more cases similar to the influenza pandemic of 1918.

So, what’s this potential wonder drug at the Korean dinner table?

Since 2003 when SARS (Severe Acute Respiratory Syndrome) rolled across Asia, Koreans remained unaffected for the most part.  Being the daily and national side dish that it is, Kimchi was promoted to status of natural preventative and cure for SARS with virtually no scientific evidence to support the claim. Believe me, as someone who eats kimchi daily and loves it so much I operate a site dedicated to kimchi and Korean cuisine, I welcome and listen to the suggestions, and hope for further scientific investigation validating such claims.  Imagine being obsessed with a food that is suddenly found to save lives in the face of a new and deadly health threat.

Scientists at Seoul National University fed a kimchi extract to thirteen chickens infected with avian flu.  A week later, eleven of the thirteen chickens apparently recovered.  To date, such studies remain unpublished and certainly not recognized by any medical or scientific community.  Professor Kang of the Seoul National University who observed the thirteen chickens stated Leuconostoc (lactic acid bacteria) found in Kimchi had a positive effect on the bird flu.

Hong Jong Hoon, a technical consultant with the Korea Agriculture Development Institute, suggested another possible and connecting factor is the ways Koreans eat most of their garlic!

Hong began his researching studies at the Center for Disease Control and Prevention’s website where he found a connection between SARS and the corona virus. He then made his way to Stanford University’s site, which lists – along with reducing stress, getting more sleep and frequently washing your hands – putting drops of garlic juice on the nostrils as a way to fight infection.  Put it all together, he says, and you see why South Korea has had only a handful of suspected cases of SARS and no fatalities, despite its close proximity to China, where the virus originated, and to hard-hit Hong Kong and Taiwan.  Hong concedes that many other countries make ample use of garlic in their diets, including Italy and China.  But they cook their garlic; Koreans eat theirs raw in kimchi. His theory may be tough to prove, but that doesn’t mean it isn’t true, he says. [4]

Park Yong Woo, a doctor of family medicine at Seoul’s Samsung Hospital, welcoming needed clinical testing, says, he’s convinced of its healing properties.

“I’d like to compare it with an orchestra,” Park says. “It’s made of cabbage. But within that are a lot of healthy constituents, including garlic, ginger and chile peppers. It’s very harmonious food.”

Kim Man Jo, a food industry consultant and author of several books, including Kimchi, Kimchi, believes Kimchi’s curing or managing properties against some infectious disease is created and found in the fermentation process – “They haven’t done experiments yet, but harmful diseases can be dominated by the lactobacilli.” she says.

Depending on the variety, I know the most common nappa cabbage kimchi variety has a strong combination of cabbage, red chili pepper powder, fish sauce, lots of garlic, salt, green onions, daikon radish, sugar, and yes, even more garlic – all fermented to perfection to deliver the heavenly flavor and strongest anti-microbial punch.  Withstanding the lack of research in swine flu and kimchi as a preventative or cure, research has found that these friendly bacteria to boost the immune system.  Further research has shown live indigenous bacteria and chemicals they produce can penetrate the intestinal wall and stimulate growth and maintenance of immune cells.  Strains of Lactobacillus can also stimulate defense cells and increase anti-viral chemicals like interferon.

To date we do have specified medical treatment and course of action despite no vaccine. While it excites me to find kimchi may possess combative properties against certain viral strains, until the claims are subjected to the  “scientific method”, it shall remain a folkloric home remedy alongside chicken soup.  Despite the lack of evidence, If a pandemic condition swept the area I live in, I would certainly heed Western medical approaches and most importantly, double up on my kimchi consumption.  Shall we say to each his own?

With the unfortunate number of those who’ve died from SARS or Swine Flu (Swine flu killing over 1100 victims worldwide as of July ’09 and over 700 claimed by SARS) perhaps it will take a pandemic and desperate condition to even consider researching these currently unfounded beliefs and claims.  Today, at least 168 countries and territories have reported confirmed swine flu cases.

Since I first ate kimchi in 1990, it remains a favorite daily side dish that I always look forward to.  Whether it cures anything or not, it certainly makes my taste buds and overall system feel great.  I just can’t sit to dine at home or a Korean restaurant without it.

While these flu strains come and go or stay, those who enjoy eating kimchi (touted as one of the five healthiest foods in the world by Health Magazine) continue to get more than their share of nature’s probiotic which some day may add new flu strains to it’s long list of combated enemies.

In the meantime, for various flu strains we have existing vaccines and for those we don’t or other still standing bugs such as the common cold, we have Gatorade, chicken soup, and old-fashioned but very effective rest.

Kimchi – A Zesty Korean Staple

Kimchi is part of the international family of pickled vegetables. It is similar to the sauerkraut of Germany, the paocai of China, the tsukemono of japan, the achar of India, and the pickles of other regions. In all its variations, kimchi provides Koreans with essential vitamins as well as a distintive flavor, which invariably draws a strong reaction from the first-time taster. Detractors protest that their nostrils and taste buds are overwhelmed by the garlic and the hot red pepper.

Yet aficionados find the assault on their senses sheer delight, and they keep coming back for more. As people seek to lend more spice to their meals, kimchi is becoming known worldwide. Servicemen from the west, immigrant workers, and thousands who came for the Seoul Olympics in 1988 got to taste it. kimchi is rich in vitamins and minerals and its fame has grown with the spreading demand for more healthful foods. Note that kimchi is a side dish. It is meant to be eaten as a compliment to other foods, particularly rice. The neutral flavor of rice and the zesty and salty flavors of kimchi compliment each other. But how is kimchi prepared?

Try making this recipe yourself and I’am sure it will become a staple in your home… First to make Spicy Korean Kimchi the following basic ingredients and and seasonings will be needed….1 pound chinese cabbage, 2 tablespoons salt, 4 cups cold water, 2 cups very hot water. The seasonings will be, 1 tablespoon finely chopped garlic, 1 tablespoon finely chopped fresh ginger, 1 tablespoon finely chopped scallions, 2 teaspoons finely chopped dried red pepper, 2 teaspoons sugar, 1 tablespoon salt…. Now, heres how to prepare the ingredients and add the seasonings:

First, separate the cabbage leaves, and sprinkle them with salt. Pour in cold water, and allow the mixture to stand in a cool place for eight hours or overnight. Rinse the cabbage well and squeeze out excess liquid. Pour very hot water over the seasonings and mix well. Combine with cabbage leaves. Put the combination in a large glass bowl. You may have to cut the leaves in half to make them fit. Cover with plastic wrap, and leave in a cool place for about two days. Drain the leaves, and cut them into bite-size pieces. Pack into a glass jar until ready to serve. Makes 1 pound. Remember, store in the refrigerator after use. Most likely you will find kimchi agreeable to your palate. when this happens, “Mat-itkae duseyo!”- thats korean for “enjoy your food!”
