What Are The Different Uses of Chocolate in Baking?

Some of the uses of chocolate in baking are as follows:

1) Making chocolate curls for decorating on cake:

Melt 3 squares of chocolate and pour the melted chocolate onto wax paper and spread to a 3″ wide stripe. Let stand until cool but not firm. Peel across the top of the chocolate curls with a sharp instrument and transfer to a plate. Store chocolate curls in freezer. You can decorate puddings, custards, cream pies, ice cream or parfait with curls or grated chocolate.

2) Looking for a quick way to drizzle fudge topping on a cake? Put the fudge in a resealable plastic bag, snip off a corner of the bag and pipe the topping over the cake.

3) Sprinkle finely grated chocolate over eggnog.

4) When making chocolate cake rolls, you may want to mix chocolate and coffee as duo. Just add cooled melted chocolate and instant coffee granules together to filling.

5) Tip for making brownies, is to cool the melted chocolate mixture completely before combining with other ingredients. Aso, test the brownies 2-3 minutes before suggested finished baking time. 9) Tip to store chocolate: keep in a cool dry place (below 75 degrees if possible) but not in refrigerator. Just so you know that at high temperatures, chocolate may become gray in color because the cocoa butter naturally rises to surface. This does not affect chocolate flavor or quality.

I am always looking for easy and rich dessert recipes to try on my family. Baking is one of my favorite things to do, but I always like to keep it simple. 1/4 cup all-purpose flour

1/4 teaspoon baking powder

1/8 teaspoon salt

8 ounces bittersweet (60% cocao) chocolate, chopped

2 tablespoons butter

2 large eggs

1/2 cup granulated sugar

1 teaspoon vanilla extract

6 ounces bittersweet chocolate chips

2 cups walnuts, coarsely chopped


1. Preheat oven to 350?F. Position racks in the upper and lower thirds of the oven.

2. Combine the flour, baking powder, and salt in a small bowl and mix together thoroughly with a whisk. Set aside.

3. Place the 8 ounces of chocolate and the butter in a large heatproof bowl set directly in a wide skillet of barely simmering water. Stir frequently just until melted and smooth. Remove the chocolate from the skillet and set it aside. Leave the heat on under the skillet.

4. In a medium heatproof bowl, whisk the eggs, sugar, and vanilla together thoroughly. Set the bowl in the skillet and stir until the mixture is lukewarm to the touch. Stir the egg mixture into the warm (not hot) chocolate. Stir in the flour mixture, then the chocolate chips and nuts.

5. Scoop slightly rounded tablespoons of batter and place 1 1/2 inches apart onto parchment lined cookie sheets. Bake for 12 to 14 minutes, until the surface of the cookie looks dry and set and the centers are still gooey. Rotate the sheets from top to bottom and from front to back halfway through the baking time to ensure even baking. Slide the parchment paper off the cookie sheets and onto racks to cool. Allow the cookies to cool completely before storing. May be kept in an airtight container for up to 3 days.

1.    The first time that a the name ‘brownie’ appeared in a recipe book was in the 1896 version of the Boston Cooking School Cook Book by Fannie Meritt Farmer. This brownie was in reference to tiny cake like versions, not a true brownie like you would find today.

2.    It was pretty quiet in the world of brownies after that – it took almost 11 years for a real brownie recipe to appear, also in the Boston Cooking School Cook Book, which was the first time a brownie was we know it today was published.  I’m not sure if it had colour pictures in, or referred to using organic or fair-trade chocolate, but it was certainly a groundbreaking recipe.

3.      One of the most popular stories about the origin of the brownie is told in the Encyclopedia or American Food and Drink, which reports that a housewife in Bangor, Maine forgot to add baking powder to her brownie, and therefore her batch didn’t’ rise properly.   Ever the impeccable host, she carried on and sliced her now invented brownie and served it unashamedly, claiming her new invention

4.    Chocolate brownies are one of the few foods where there is a strong divide between the way a brownie should be prepared.   Half of the world loves a cake like brownie, whilst the other half would die without a beautiful fudge brownie to devour.

Brownie the Bear Beanie Baby – History and Counterfeit Information

Brownie the Bear is a “lay-down” style bear with brown plush fabric and a tan snout. Brownie is considered a “pre-Beanie” which means that he is rare and hard to find because he was only sold at retail for a very short time.

Brownie the Bear was one of the first nine Beanie Babies that were introduced in 1993 at the World Toy Fair in New York City. These first nine Beanies would become known as the “Original Nine.”

The “Original Nine” Beanie Babies were Brownie the Bear, Flash the Dolphin, Spot the Dog, Legs the Frog, Squealer the Pig, Patti the Platypus, Chocolate the Moose, Splash the Whale and Pinchers the Lobster.

Brownie the Bear has style number 4010 printed on the hang tag. Brownie doesn’t have a birthday and it doesn’t have a poem.

Brownie only has the first generation hang tag and a 1993 black and white tush tag.

The first generation tag is a single, heart shape card stock that is attached to the Beanie with a plastic fastener. The first generation tag is two-sided and a single sheet of card stock. Later generation tags open like a locket. The first generation hang tag has “ty” printed on the front of the tag in a lower case white font which is much thinner and smaller than today’s tags.

The first generation hang tag has “The Beanie Babies Collection”, the style number and the Beanie’s name printed on it.

Brownie was quickly retired which means that the Ty corporation stopped manufacturing Brownie. Brownie was replaced with Cubbie the Bear.

Cubbie the Bear is physically identical to Brownie the Bear in color and size. The only thing that makes them different from each other is the fact that both bears have their name printed on their first generation hang tag. Other than that, the first generation Cubbie and Brownie are identical.

So if you switched the hang tags on the two bears then no one would know which one was really the Brownie or Cubbie. And if you removed the hang tag from Brownie you would not know whether it was a Brownie or a Cubbie. So you can’t really sell a Brownie the Bear as a “Brownie” if it doesn’t have a hang tag on it. It could very well be a Cubbie if it has the black and white tush tag.

Brownie sold in the $3,000 to $4,000 price range in 1998. In 2013, Brownie was being sold in the $500 to $1,000 price range on eBay.

Because Brownie was so valuable many counterfeits were made of it. Rather than making a counterfeit Brownie with a counterfeit hang tag, it would have been a lot easier if the counterfeiter purchased a Cubbie with a first generation tush tag without a hang tag on eBay and then attached a counterfeit first generation hang tag to it. Instead the counterfeiters attempted to duplicate both the Beanie and the tags and made a major mistake with the fake hang tag.

Every counterfeit Brownie I have ever seen had the wrong generation heart tag on them. As I previously stated, Brownie the Bear only came with a first generation heart tag that is a single sheet of card stock. All the counterfeit Brownies I have seen have the second generation heart tag that opens like a locket.

If you are a Beanie Baby collector then you will want to add Brownie the Bear to your collection if you have the opportunity to buy one a good price. Just do an “advanced” search on eBay for “completed auctions only” for “Brownie the Bear Beanie” to see what they have sold for the last 90 days. You want to take note of the ones that actually sold and not what they were listed for. Try to buy one at the low end of the price range and you will get a good deal.

Cake-Style Or Fudgy? The History and Evolution of Brownies

The brownie, perhaps America’s favorite baked treat, was “invented” in the United States, though no one is quite sure where. Evidence suggests brownies were first made in New England at the beginning of the 20th century. Although cake-like and baked in a cake pan, brownies are classified as bar cookies rather than a cake. There are thousands of recipes for brownies, both “cake-style” and “fudge-style” and everything in-between. What determines the style of brownie is its ratio of flour to chocolate and/or cocoa.

Where Did The Word “Brownie” Originate?

It’s easy to see that the brownie got its name from its dark brown color. But as with most foods, the origin of the “brownie” is shrouded in myth. The brownie is relatively new to baked goods, making its first appearance in the early 20th century. A legend is told that a chef mistakenly added melted chocolate to a batch of biscuits. Another legend claims that a cook was making a cake but didn’t have enough flour and baked his batter anyway. Voila, the brownie!

The most popular legend tells of a housewife in Bangor, Maine, who was making a chocolate cake but forgot to add baking powder. When the cake didn’t rise, she just cut and served the flat pieces. This tale relies on a cookbook published in Maine in 1912. However, years earlier the first chocolate brownie recipe was published by one of America’s most famous cookbook authors, Fannie Merritt Farmer, in 1906.

Was Fannie Merritt The First?

Numerous sources cite the first-known recipe for brownies as the 1897 Sears, Roebuck Catalogue, but this was a recipe for a molasses candy merely called brownies. The name honored the elfin characters featured in popular books, stories, cartoons and verses of the time by author Palmer Cox.

Larousse Gastronomique, regarded by many as the ultimate cooking reference, states that a recipe for brownies first appeared in the The Boston Cooking School Cook Book, written by Fannie Farmer in 1896, but that was for a cookie-type confection that was colored and flavored with molasses and made in fluted Marguerite molds. However, as verified by Jean Anderson in “The American Century Cookbook: The Most Popular Recipes Of The 20th Century,” the two earliest published recipes for brownies appear in Boston-based cookbooks: the first in a later edition of “The Boston Cooking-School Cook Book.”

The First Recipe

Culinary historians have traced the first “brownie” to the 1906 edition of The Boston Cooking School Cook Book, edited by Fannie Merritt Farmer. This recipe is an early, less rich and chocolaty version of the brownie we know today, utilizing two squares of melted chocolate. It is not known whether Fanny Farmer obtained the recipe from another source, printed it or adapted it, or just provided the name.

The Second Recipe

The second recipe, which appeared in 1907, was in Lowney’s Cook Book, written by Maria Willet Howard and published by the Walter M. Lowney Company of Boston. Ms. Howard, a protege of Ms. Farmer, added an extra egg and an extra square of chocolate to the Boston Cooking School recipe, creating a richer, more chocolaty brownie.

Chocolate or Cocoa?

Today, brownies are baked with either cocoa or melted chocolate or a combination of both. Artisan bakeries, like Ruth’s Brownie Kitchen, even use special premium chocolates and cocoa, like fabulous Valrhona chocolates, from the famous French manufacturer, to give their baked goods an extra special deep, satisfying one-of-a-kind chocolate taste.

Cake-Style or Extra Fudgy?

While the original brownie recipes were all “cake-style,” that is with the texture of a cake but somewhat richer and denser, over the years recipes for brownies have evolved usually by increasing the proportion of chocolate to flour. Some of today’s recipes are even actually more like fudge than cake.

Each type of brownie has its diehard adherents, but it seems that the fudge-style is winning out with two-thirds of those who voice their opinion preferring the richer, denser, creamier version. Still, one-third of all people are solidly in the cake-style camp.

The Nation’s Favorite

While the first brownie recipes were published and variations began to evolve in the first years of the 20th century, it took until the 1920s for the brownie to become the country’s absolute favorite baked chocolate treat, a position it still maintains today.

  • Cut sugar by ¼ to ½.
  • Add finely grated beets to brownie or other chocolate recipes and reduce sugar by ¼.
  • Make cookies and brownies smaller.
  • Substitute ¼ of the white flour in your recipe with buckwheat or almond flour.
  • Keep the cake frosting thin. Add moisture to inner layers by brushing apple juice on the layers surrounding the frosting.
  • Make pie crust out of meringue.
